My husband had smoked a brisket last weekend and we just got tired of eating plain brisket every day. We are pretty good about making sure we don’t waste any food and try to come up with different ways to eat the food. One day we made BBQ sandwiches with the meat, but then a couple days ago, my husband saw a picture of brisket tacos. A light bulb went off in his head and he was determined to make a version of them. I just have to say that these are bad ASH! We ate them 2 days in a row and I could probably eat them another day because they are just THAT good. There really isn’t any measurements of any of the ingredients, we just literally threw everything together. My husband loves pico de Gallo so he also made some for one of the toppings. He included tomatoes, jalapeno peppers and white onion. I was wanting to buy some pepper jack cheese but there was only jalapeno jack available so that’s what I went with. I also bought a bag of coleslaw, but I decided not to buy the actual coleslaw dressing because we had something else at home to mix with it instead. Last but not least, we needed the flour tortillas to stack everything in. Below I will have the list of ingredients we used and also a picture of everything, except for the brisket itself.
Jalapeno Jack Cheese
Pineapple Mango Coconut Tequila Sauce (mix with coleslaw mix)
White Onions (pico)
Flour Tortillas (we warmed ours up in a skillet and put the cheese on when we flipped the tortilla to melt it)
